flour tortilla strips, fried, for serving


1 Bringthestocktoa simmerina large
saucepan.Addthechicken,turnoffthe
heatandallowtostandfor5 minutesuntil
justcookedandstillmoist.Removeusing
a slottedspoonandshredwhencool
enoughtohandle. 2 Simmerthecorn,
chilli,corianderandlimeinthestockfor
10 minutes.Addtheshreddedchickenand
avocadoandgentlyheatthrough.Season
totaste.Sprinklewithcorianderandpass
aroundcrisptortillastrips to serve.

garlic2–3cloves,chopped
freshginger1 x 2.5 cm piece, peeled
andchopped
salt,totaste
currypowder1 T
canolaoil,forfrying
onion1,finelychopped
large,riperedtomato1,grated
coconutmilk1 x 400 ml can
brownsugar1 T
vinegar1 T
coriander2 t finelychopped
lemon wedges, for serving

finelychoppedfreshchilli,forsprinkling
warm naan bread,for serving

1 Discardanybrokenmusselsoronesthat
donotclosewhentappedsharplyon
a counter.Poundthegarlic,gingerandsalt
to forma paste.Mixwiththecurrypowder.
2 Heat2 T oilina large,heavypanandadd
theonion.Cookgentlyuntilsoftenedbut
stillpale,addingmoreoilif necessary.Stir
inthecurrypaste.Cookgently,stirring,
untilfragrant.Addthetomato(discardthe
skin)andsimmerfora fewminutes. 3 Pour
inthecoconutmilkandbringtoa simmer.
Addthesugarandvinegar.Simmer
uncoveredfor5–10minutesuntilslightly
reduced.Stirinthetightlyclosedmussels
andcovertightly. 4 Cookovera highheat
fora fewminutesoruntilthemusselshave
opened.Discardanythatstayclosedbut
dogivethema chancetoopen.Addthe
coriander.Squeezeoverthelemonjuice
andaddchillito taste. Serve with the naan.
