    combination few have experienced in
    the country. “When I lived in Thailand,
    Indian food was my comfort food on the
    days when I missed home. The spices
    used are different, but both Indian and
    Peruvian cuisines are rich in flavour,
    in chillies, rice, potatoes,” Francesca
    says. Parts of Peru and Thailand are
    antipodes, diametrically opposed points
    on the Earth’s surface, and if you dig a
    proverbial hole to the other side of the
    world, this is where you’ll end up. She


adds: “Peru has many different climates,
and the Peruvian Amazon is very
similar to Thailand’s tropical climate
as they share proximity to the equator.
Naturally, you won’t find exactly the
same ingredients, but I think they are
probably from the same family, because
the flavour profiles are very similar.”
The food of Peru reflects centuries
of what Javier calls “culinary blending”.
“We are a very diverse nation. First,
we had the various great empires that
populated the area we now call Peru.
Then we had the Spanish, who brought
African slaves, who brought with them
an Arabian influence. When the slaves

were freed, we needed people to work
the land, so the Chinese arrived. This
was the biggest migration in our history
until now – the Venezuelan migration.
Between these two migrations,
we received Italians, Germans and
Japanese. All these nations have
influenced Peruvian food.”
Today, we speak of Chiffa (Peruvian-
Chinese), Nikkei (Peruvian-Japanese)
and the food of the coast, highlands
and the jungles of the Amazon.

For decades Gastón Acurio,
building on the work of the cooks and
chefs before him, was the single figure
seen spearheading Peruvian cuisine in
Peru and on the international circuit.
