Summer berry


frozen yogurt
A refreshing summer fro-yo that’s a
breeze to whip up and is also dairy-free

SERVES 10
✿160g can coconut cream
✿ 375ml (13oz) dairy-free coconut
yogurt
✿ 3tbsp runny honey
✿ 300g (10oz) mixed frozen berries

Whisk the coconut cream, yogurt and
honey together until well combined and
smooth. Stir the frozen berries into the
mixture, crushing some of them slightly to
inject extra flavour, colour and texture.

Pour into a freezer-proof container lined
with greaseproof paper and freeze for
several hours – preferably overnight – until
firm to the touch.

To serve, remove from the freezer and
allow to soften at room temperature
for at least 30 mins.
