melon lollies
The perfect low-cal refreshing ice lolly that
the whole family will love

MAKES 8
✿ About 500g (1lb) fresh watermelon,
cut into chunks – no need to deseed it
✿ About 300g (10oz) honeydew melon
flesh, deseeded, cut into chunks
✿ Juice of 1 lime
✿ 100ml (3½fl oz) pressed apple juice
YOu wiLL ALSO nEEd
✿ 8 lolly moulds
✿ 8 lolly sticks

Put the watermelon in a blender and
whizz until smooth. Strain into a jug, then
pour into 8 lolly moulds to come about a third
of the way up. Freeze for about 1 hr or until
almost solid.

Rinse out the blender and add the
honeydew melon with the lime juice
and apple juice and whizz to a purée.

Push the mixture through a sieve into
a bowl or jug, then pour into the lolly
moulds, inserting a stick in the middle.
Freeze until solid.

Pour in remaining watermelon juice to fill
the moulds, then freeze.

To release the lollies easily from their
moulds, dip the moulds in hot water
for 10-20 secs.
