Lemon Biscochitos
Biscochitos are the state cookie
of New Mexico. I perked them up
with lavender and lemon.

Prep: 30 min. + chilling
Bake: 10 min. / batch + cooling
Makes: 6 dozen

¹₂ cup unsalted butter, softened
² ₃ cup sugar
1 large egg, room temperature
1 Tbsp. dried lavender flowers
1 Tbsp. grated lemon zest
1 ¹ ₂ cups all-purpose flour
1 tsp. baking powder
¹ ₄ tsp. salt


  1. In a large bowl, cream butter and
    sugar until light and fluffy, about
    5 minutes. Beat in the egg, lavender
    and lemon zest. In another bowl,
    whisk flour, baking powder and salt;
    gradually beat into creamed mixture.
    Divide dough in half. Shape each into
    a disk; cover and refrigerate until firm
    enough to roll, about 30 minutes.

  2. Preheat oven to 350°. On a lightly
    floured surface, roll each portion of
    dough to ¹ ₄-in. thickness. Cut with
    a floured 1-in. round cookie cutter.
    Place 1 in. apart on parchment-lined
    baking sheets. Sprinkle with sugar.

  3. Bake until the bottoms are light
    brown, 9-11 minutes. Remove from
    pans to wire racks to cool. Store in
    airtight containers.

Rosemary
Strawberry Daiquiri
I used to teach herb classes at our
local technical college, and everyone
always enjoyed my segment on herbal
cocktails like this one.

Prep: 20 min. + cooling
Makes: 8 servings


1 cup sugar
1 cup water
4 fresh rosemary sprigs
EACH SERVING
1 cup frozen unsweetened
sliced strawberries
1 ¹ ₂ oz. white rum
2 Tbsp. lime juice
Whole fresh strawberries and
rosemary sprigs



  1. In a saucepan, bring sugar and
    water to a boil. Reduce heat; simmer
    10 minutes. Remove from heat; add
    rosemary. Steep for 10-15 minutes
    according to taste. Discard rosemary.
    Cool. Store in an airtight container
    in the refrigerator up to 1 month.

  2. For each serving, in a blender,
    combine the frozen strawberries,
    white rum, lime juice and 2 Tbsp.
    rosemary syrup; cover and process
    until smooth. Pour into a chilled glass;
    garnish with a whole strawberry and
    an additional rosemary sprig.
