the curry sauce.2 Preheat the oven to 200°C/400°F/
gas mark 6. Line a baking sheet with
non-stick paper.
3 Mix the panko breadcrumbs
and curry powder together in a
polythene (freezer) bag.
4 Coat the cod in flour. Dip into egg,
then into the crumb mixture. Shake
the bag to coat the cubes.
5 Place on a baking sheet and drizzle
with oil. Bake for 8-10 minutes,
turning half way through the cooking
time. Serve with the curry sauce.Ingredients
