PROSCIUTTO-WRAPPED PORK
IN APPLE CIDER SAUCE
SERVES 4
PREP 20 MINUTES COOK 20 MINUTES
4 pork scotch fillet steaks
4 slices prosciutto
2 tablespoons extra virgin olive oil
12 fresh sage leaves
50g butter
2 pink lady apples, cored, cut into
thin wedges
1 tablespoon brown sugar
½ cup apple cider (see note)
¹⁄³ cup thickened light cream
for cooking
2 teaspoons Dijon mustard
Crusty bread, to serve

1 Place pork on a board. Wrap 1 slice
prosciutto around each pork steak,
overlapping to secure. Heat oil in a large
frying pan over high heat. Add sage.
Cook for 1 to 2 minutes, turning, or until
golden and crisp. Transfer sage to a plate
lined with paper towel to drain. Add pork

to pan. Cook for 3 minutes each side or
until browned and almost cooked through.
Transfer to a plate.
2 Reduce heat to medium-high. Add butter
and apple to pan. Cook, stirring, for 2 to
3 minutes or until apple is almost tender.
Add sugar. Stir to coat apple. Add cider.
Bring to the boil. Boil for 2 to 3 minutes
or until reduced by half.
3 Add cream and mustard to pan. Stir to
combine. Add pork and any resting juices
to pan. Simmer for 2 to 3 minutes or until
sauce thickens and pork is cooked through.
Season with salt and pepper. Sprinkle pork
with sage. Serve with crusty bread.

OVEN-BAKED MUSHROOM,
KALE AND HERB RISOTTO
SERVES 4
PREP 20 MINUTES COOK 45 MINUTES
¼ cup extra virgin olive oil
300g portobello mushrooms,
roughly chopped
200g Swiss brown mushrooms, quartered
1 brown onion, finely chopped
3 garlic cloves, finely chopped
1 tablespoon finely chopped fresh rosemary
2 teaspoons chopped fresh tarragon leaves
2 cups arborio rice
1 litre vegetable stock
70g chopped kale leaves
½ cup finely grated parmesan,
plus extra to serve
Lemon wedges, to serve

1 Preheat oven to 180°C/160°C fan-forced.
Heat 2 tablespoons oil in a large
flameproof, ovenproof baking dish over
medium-high heat. Add mushroom. Cook,
stirring, for 5 minutes or until tender.
Transfer to a plate. Set aside.
