At Sails Restaurant, it’s all about the details. The
marble used for the bar was imported from Greece, the
stemware was hand-blown in Slovenia, and the Laguiole flatware is both
elegant and utilitarian. An extra perk for female diners: Your handbag can
recline on a custom leather purse holder until you’re ready to leave.
The husband-and-wife team of Veljko Pavicevic and Corinne Ryan
worked on the “pescatarian’s haven” for nearly three years before opening
in February at the base of Fifth Avenue
South. Joining them on this journey is execu-
tive chef Jacob Jasinski from Seasons, the
award-winning restaurant at Ocean House in
Westerly, Rhode Island.
Most of the fish and shellfish are flown in daily
from Europe, although the restaurant uses local
seafood when it meets Pavicevic’s high standards.
“We’re only interested in fish that has been out of
the water less than 24 hours,” he says. Selections
are pricey and tend to run out during the evening,
so it’s best to either arrive early or reserve your
fish in advance. Either way, it will
be cooked on the cherrywood-
burning grill and presented with lemon, sea salt, and olive oil.
That organic, single-estate olive oil from Greece forms the foundation of
many of the restaurant’s dishes, from the heirloom tomato salad to the grilled
or sautéed seafood. “It’s the most important component in European coastal
cuisine, for flavor as well as health,” says Pavicevic, who earned his stripes at The
Ritz-Carlton in Naples and worked at many Ritz hotels around the country. He
describes Sails as “a simple family restaurant.” While true in one sense, it’s also a
