Fruity Crumble
This healthier crumble uses the
natural sweetness of the fruit with
some maple syrup rather than the
large amount of refined sugar found
in traditional crumbles. Replace
the maple syrup with honey, if you
prefer. Berries and purple plums are
also rich in polyphenols, which have
powerful antioxidant properties

Hands-on Time 15 minutes Cooking
Time About 40 minutes Serves 6
450g ripe plums, halved and stones
removed

6 tbsp maple syrup
2½ tsp ground cinnamon
3 tsp vanilla extract
300g frozen mixed berries, defrosted
1 tbsp cornflour
100g rolled oats
75g whole-wheat flour
50g flaked almonds
75g coconut oil


  1. Preheat oven to 200°C. Put the
    plums into a frying pan with a lid
    with 2 tbsp water, 3 tbsp of the
    maple syrup and 1 tsp each of the
    cinnamon and vanilla. Cover and
    simmer gently for about 5 minutes,
    until tender. Add the berries, with


their juice, and the cornflour, and
mix well. Tip the mixture into a 1,1ℓ
ovenproof dish.


  1. In a large bowl, mix together the
    remaining maple syrup, cinnamon
    and vanilla with the oats, flour, flaked
    almonds and coconut oil. Spoon over
    the fruit and then bake for 20 to 30
    minutes until the fruit is bubbling and
    soft and the topping is golden.
    EACH SERVING About 1 560kJ, 7g
    protein, 19g fat (11g saturated),
    41g carbohydrate (18g total sugars),
    7g fibre.

To make this
gluten-free,
replace the
whole-wheat
flour with an
equal amount of
gluten-free oats,
whizzed to a fine
crumb in a food
processor.
