1¾ cups cake flour
1½ tsp baking powder
1 tsp bicarbonate of soda
½ tsp salt
2 cups low-fat buttermilk
2 large eggs
3 tbsp sugar
3 tbsp vegetable oil
1 tbsp vanilla extract


  1. Preheat waffle maker. In a large
    bowl, whisk flour, baking powder,
    bicarbonate of soda and salt. In
    a medium bowl, whisk buttermilk,
    eggs, sugar, oil and vanilla. Add
    buttermilk mixture to flour mixture.
    Stir until just combined. (Small lumps
    are okay.)
    2. Spray waffle maker with nonstick
    cooking spray. Add ½ cup batter
    to waffle maker. Close waffle
    maker and cook for 2 to 5 minutes
    or until golden brown and crisp.
    Keep warm by placing directly on
    oven rack in a 105°C oven. Repeat
    with remaining batter. Cooked
    waffles may be cooled, wrapped
    tightly in clingwrap and frozen for
    up to 1 month. Reheat in a 180°C
    oven for 8 to 10 minutes (directly
    on oven rack) until hot and crisp.
    EACH SERVING About 940kJ,
    7g protein, 8g fat (1g saturated),
    30g carbohydrate, 1g fibre,
    490mg sodium.
