¾ cup low-fat buttermilk
¼ cup hot sauce
2 tsp garlic powder
4 boneless, skinless chicken thighs
(about 450g), cut into quarters
½ cup grainy mustard
¼ cup maple syrup
1 ℓ vegetable oil
1¼ cups cake flour
32 frozen mini waffles
spring onions, thinly sliced, to garnish


  1. In a large bowl, whisk buttermilk, hot
    sauce, garlic powder and ½ tsp each salt
    and black pepper. Add chicken, tossing

to coat; set aside.


  1. In a small bowl, whisk mustard and
    maple syrup; set aside. Place a wire rack
    over a large sheet of wax paper.

  2. In a deep, heavy 30cm frying pan, heat
    oil on medium-high until it reaches 180°C.
    While oil heats, working with 1 piece of
    chicken at a time, remove from buttermilk,
    allowing excess to drip off, and dredge
    through flour. Dip in buttermilk again and
    dredge through flour once more. Place
    on another large sheet of wax paper.
    Repeat with remaining chicken and flour.

  3. Add half of breaded chicken to frying
    pan. Fry for 8 to 10 minutes or until deep


golden brown and cooked through (70°C),
turning over once or twice to brown evenly.
Transfer to prepared wire rack. Sprinkle
with a pinch of salt. Repeat with remaining
chicken.


  1. Toast waffles according to instructions
    on label. Place chicken on half of waffles.
    Drizzle with maple mustard and sprinkle
    with spring onions. Top with remaining
    waffles, using toothpicks to hold tops in
    place. Serve immediately.
    EACH SERVING About 820kJ, 7g protein,
    10g fat (1g saturated), 18g carbohydrate,
    1g fibre, 415mg sodium.

2 thick slices brioche, challah or egg bread
2 tbsp grated mozzarella cheese
3 thin slices turkey
2 to 4 slices pickle
2 tbsp grated Swiss cheese


  1. Preheat waffle maker.

  2. Spread 1 tsp mustard on 1 side of each
    slice of bread. Top 1 slice bread with
    mozzarella, turkey, pickles, then Swiss
    cheese. Top with second slice of bread.

  3. Spray waffle maker with nonstick
    cooking spray. Place sandwich in heated


waffle maker, pressing top down firmly.
Cook for 5 to 7 minutes or until cheese
melts and bread is deep golden brown.
EACH SERVING About 1 570kJ, 28g protein,
16g fat (7g saturated), 32g carbohydrate,
2g fibre, 950mg sodium.
