Salted Chocolate
Cookies

375g icing sugar, sifted
100g cocoa powder, sifted
1 tbsp cornflour
1 large egg, plus 2 large egg whites
2 tsp vanilla extract
175g dark-chocolate chips
Maldon sea-salt flakes, to decorate
(optional)


  1. Preheat oven to 180°C. Line two
    baking trays with baking paper.

  2. In a large bowl, mix icing sugar,
    cocoa powder, cornflour and
    1 tsp salt. In a jug, combine egg,
    egg whites and vanilla.

  3. Mix egg mixture into dry mixture
    (don’t worry, it will come together)
    and fold in chocolate chips.

  4. Space heaped tbsps of dough
    5cm apart on the baking trays.
    Sprinkle over a little sea salt, if using.
    Bake for 14 to 16 minutes until
    puffed up and cracked. Cool on
    the baking trays; remove using
    a palette knife.
    EACH SERVING About 770kJ,
    3g protein, 5g fat (3g saturated),
    32g carbohydrate (30g total
    sugars), 1g fibre.
