Ice-cream S’mores
Who needs a campfire?! Mix mini
marshmallows with softened ice cream
or frozen yoghurt, then spread in a tin and
refreeze. Cut squares to sandwich between
Tennis Biscuits, then dip in melted chocolate
and marshmallow bits, sprinkles or nuts

Active Time 25 minutes Total Time
35 minutes, plus freezing Serves 8
500ml of your favourite ice cream or frozen
yoghurt (we used berry frozen yoghurt
and mint ice cream with chocolate chips)
1 cup mini marshmallows
16 Tennis Biscuits
230g dark chocolate, chopped
½ cup marshmallow bits, sprinkles
or walnuts (or a combination)


  1. Let ice cream sit at room temperature
    for 10 minutes. Transfer to large bowl of
    electric mixer and beat until smooth. Beat
    in mini marshmallows.

  2. Transfer to a 20cm square tin lined
    with clingwrap and freeze until firm
    (at least 2 hours).

  3. Cut ice cream into squares and
    sandwich between Tennis biscuits.

  4. Microwave chocolate on 50% power in
    30-second intervals, stirring in between,
    until melted and smooth.

  5. Dip each Tennis Biscuit sandwich
    halfway into chocolate, then sprinkle
    immediately with marshmallow bits,
    sprinkles or walnuts and freeze until firm.
    GH TIP Let the ice cream sit out for 10
    minutes to get it to the perfect mixing
    consistency.
