Fortune Cookies
Preparation Time 10 minutes Total Time
40 minutes, plus cooling Makes 10
2 tbsp butter
¼ cup icing sugar
1 large egg white
1 tsp vanilla extract
⅛ tsp salt
¼ cup cake flour
10 strips paper (each 7,5cm by 1,3cm)
with fortunes
melted chocolate (dark, milk or white)
and chopped nuts (both optional),
to decorate
- Preheat oven to 190°C. Line 2 small
baking trays with baking paper. - In a small pot, heat butter on low until
melted; remove from heat. Whisk in
icing sugar, egg white, vanilla and salt
until blended. Beat in flour until smooth. - Drop 1 heaped tsp batter onto tray.
With a small metal spatula or back
of a spoon, spread batter evenly to
form a 7,5cm round. (See picture A.)
Repeat with another tsp of batter at
least 10cm away from first.
- Bake until cookies are light golden
brown (6 to 7 minutes). Loosen cookies
with a metal spatula; flip onto flat sides. - Working with 1 cookie at a time,
place fortune across centre of hot
cookie. Fold hot cookie in half, forming
a semicircle; press edges together.
(See picture B.) - Quickly fold semicircle over edge of
a small bowl to create fortune-cookie
shape. (See picture C.) Place in a mini
muffin pan to hold shape. (See picture
D.) Repeat with remaining cookie. - Repeat with remaining batter and
strips of fortune paper to make 10
cookies in all, cooling baking trays
between batches. - If desired, dip cookies in and/or
drizzle them with chocolate, then roll
in nuts. Place on wax paper until set.
EACH COOKIE About 210kJ,
1g protein, 3g fat (2g saturated),
6g carbohydrate, 50mg sodium.
We predict our home-made take on fortune cookies, with
custom messages, will be a hit with friends and family.
Fortunately, you can also cheat and dunk the shop-bought
kind in melted chocolate. Lucky you!
