a roastinggridwithanoventrayunderneath
sothatit willroastevenly. 3 Placethered
peppersona separatetray,seasonand
drizzlewitholiveoil.Roastfor 30 minutes,
thenremovefromtheovenandcool.
4 Roastthechickenfor1 hour.It’sdone
whenthejamontheskinis thickand sticky.

1 Preheattheovento200°C.Brusha 20
cmroundbakingdishwithmeltedbutter.
2 Meltthebutterina mediumsaucepan,
thenaddtheflour.Cookuntiltheflouris
goldenbrown,thenaddthemilk,whisking
continuallyuntilthemixturehasthickened.
Addthesalt,pepper,mustardpowderand
cheeseandmixuntilcombined.Allowto
coolfor5 minutes. 3 Usinganelectricmixer,
beat the egg whites until stiff peaks form,
thenwhisktheeggyolksintothecheese
mixture.Foldtheeggyolkmixtureintothe
eggwhitemixture,a thirdata time. 4 Bake
for 20 minutesuntilcaramel in colour.

addtheolives,capers,garlic,parsley and
tomatoes.Seasonandserve.
