lemon zest, for sprinkling
Fortheavocadomayo:
free-rangeegg 1
garlic1 smallclove
avocado½,roughly chopped
lemon1,juiced
salta pinch
freshly ground black pepper,to taste
neutraloil(not olive) ¾ cup
1 Preheattheovento200°C.Boilthe
potatoesina largesaucepanofsalted
wateruntiltender,about 15 minutes.
2 Drain,thenusinga choppingboard,
smasheachpotatowiththepalmofyour
handuntilit is flattenedslightlyandthe
skinsplitsopen.Transfertoa bakingtray,
drizzlewiththeoliveoilandseasonwith
thethyme,saltandpepper.Addthegarlic
andtosseverythingtogethergentlyto
coat.Bakeuntilthepotatoesaregolden
andcrispy,about 15 minutes. 3 Tomake
themayo,placealltheingredients,
excepttheoil,ina blender.Slowlydrizzle
intheoilina constantstreamwiththe
blenderrunningata lowspeed.Blend
untilalltheoilis incorporatedandthe
mixturethickenstotheconsistencyof
mayonnaise.Seasoningtotaste. 4 Serve
thepotatoeswiththemayo,garnished
withthemicroherbsandlemonzest.
