How This Book Works


Each recipe in this book is part of a complete menu, but feel free to mix and match as you
see fit. A salad from one chapter may be the perfect complement to another dish you’ve
set your sights on making. The menus are only my suggested pairings—you are the boss in
your kitchen! Use the index in the back of the book (page 170) to quickly search for recipes
by type.
The timeline at the beginning of each menu gives wonderful suggestions on things
you can prepare in advance. Do as much or as little in advance as you like. Each recipe
also includes allergen labels, where applicable, outlining the top food allergens the recipe
is free of (nuts, dairy, or soy). This will help you steer clear of any recipes that may have
ingredients you’ll need to avoid.

Creating the Perfect Flour Blend


In my first book, The Complete Guide to Naturally Gluten-Free Foods, none of the recipes
used a flour blend. Very few used any flour at all, in fact, and consisted instead of recipes
that were naturally gluten-free. Because entertaining is based on tradition and includes so
many pies, cakes, and cookies, however, I knew I’d have to find a way to include some flour-
based recipes here.
That said, I’ve never been a fan of cookbooks that tout their very own blend of flours
because you’re instructed to make a big batch, and then you can only really use it in the
recipes in that one cookbook—which means it often winds up in a zipper bag lost in the
back of your pantry never to be seen or used again. So I totally understand your hesitation
to make another blend. But here’s the difference: My simple blend consists of only three
ingredients and can be made and used in two ways. You can either make a big batch of the
blend, or you can measure out each of the three ingredients individually for each recipe,
so nothing goes to waste. Each recipe states both measurement options. Be forewarned,
though: This blend has a fantastic neutral flavor, gives baked goods a beautiful texture,
and works brilliantly cup-for-cup (you may only need to reduce the liquid in your recipe
slightly) in almost all of your gluten-containing recipes, so you might need more on hand
than you think!
