Baked Crab Cakes

a coating of finely crushed corn flakes crisps beautifully in the oven,
so these baked crab cakes are just as good as any fried version. Instead of tartar sauce,
I serve these with the avocado Mousse on page 23.
1 teaspoon olive oil
2 cloves garlic, minced
½ cup (80 g) diced onion
½ cup (60 g) diced celery
½ cup (75 g) diced red bell pepper
¼ cup (25 g) finely chopped scallion
(green parts only)
1 tablespoon (11 g) Dijon mustard
¼ cup (56 g) mayonnaise
4 teaspoons old Bay seasoning
¼ teaspoon salt
2 teaspoons lemon zest
2 eggs
3 cups (102 g) corn flakes, finely
crushed, divided
1 pound (454 g) crabmeat, picked
over for shell fragments
