Bitter Greens Salad


•Soy-free •Dairy-free •Nut-free

Creamy tahini and herb dressing is just right with bitter greens. any leftover
dressing will keep nicely in the fridge for about 5 days.

To make the dressing: Combine the garlic, tahini, lemon juice, water, olive
oil, basil, parsley, and a pinch each of salt and pepper in a food processor
or blender. Blend until smooth and creamy.
Toss the desired amount of dressing with the greens and serve, or serve
the dressing on the side and let guests dress their own salad.

Yield: 6 servings


Chef’s Tip
A blender will give your dressing a smoother, creamier consistency while
a food processor will leave this dressing with a little more texture. It’s
delicious both ways!

Apple and Fig Charoset

Charoset on the passover table is meant to symbolize the mortar used by the Israelites to lay


bricks when they were enslaved in egypt. Often eaten plain or with matzo, this simple but

essential element of the passover table has the addition of dried figs for texture and interest.


Combine all of the ingredients in a medium-size mixing bowl. Let sit for at
least 1 hour to combine the flavors before serving.
