Chocolate Chip Almond Torte


•Soy-free •Dairy-free

This cake has a beautiful moist crumb and is quick to make. It’s full of protein thanks
to the almonds and the egg whites, so I don’t feel guilty having the leftovers
with coffee the next morning for breakfast!

Preheat the oven to 350 ̊F (180 ̊C, or gas mark 4). Lightly grease a 9-inch
(23 cm) springform cake pan.
In a medium-size bowl, using an electric mixer, beat the egg whites,
salt, and sugar until stiff peaks form. Use a rubber spatula to fold in the
almond flour, oil, vanilla, and chocolate chips. Stir until just combined,
taking care not to deflate the egg whites by overmixing.
Gently pour the mixture into the prepared pan. Bake for 35 minutes,
or until golden and the sides begin to pull away from the pan.
Cool the cake on a rack, then run a knife around the edge of the
pan to loosen the cake. Remove the rim of the springform pan and cool
completely.

Yield: One 9-inch (23 cm) cake; 8 servings


Chef’s Tip
To keep this cake pareve, be sure to use chocolate chips that are dairy-free!
