¼cup(60ml)extravirginolive oil

30gbabyrocketleaves
6 mediumfreshfigs(360g),torn in half
2 tablespoons lemon juice


1 Combinechicken,slicedfennel,
garlic,rosemary,rind,honeyandhalf
theoilina largedish.Cover;refrigerate
for2 hours.
2 Preheatovento220°C/200°Cfan.
Linea largeoventraywithbakingpaper.
3 Transferchicken,slicedfennel,garlic
androsemarytotray,ina singlelayer;
discardmarinade.Drizzlechickenwith
extrahoney;season.Roast,brushing
occasionallywithpanjuices,for
40 minutesuntilchickeniscooked.
4 Meanwhile,combine1 tablespoonof
theremainingoilwithrocket,figsand
juiceina mediumbowl;season.
5 Servechickenmixturewithrocket
saladandreservedfennelfronds;
drizzle with remaining oil.

threelayersofbakingpaper,extending
thepapers5cmabovetheedge.
