‘MEAT-LESS’LOAF

Youwillneedtosoak the lentils
8 hoursahead.


1¼cups(250g)driedredlentils
2 tablespoonsextravirginoliveoil
1 mediumonion(150g),choppedfinely
2 clovesgarlic,choppedfinely
¼cuporeganoleaves,chopped finely
1 teaspoonsmokedpaprika
1 mediumcarrot(120g)
2 mediumparsnips(500g)
3 eggs,beatenlightly
½cup(125ml)vegetablestock
1½cups(180g)gratedcheddar
120gmixedsaladleaves
1 cup(275g)tomatoand smoky
chipotlerelish


1 Placelentilsina largebowl,cover
withcoldwater;standfor8 hoursor
overnight.Drain;rinseundercoldwater,
drainwell.
2 Preheatovento200°C/180°Cfan.Oil
a 13cmx 23cm,6cmdeeploafpan;line
baseandsideswithbakingpaper.
3 Heatoilina mediumfryingpanover
mediumheat.Cookonion,garlicand
oregano,stirringoccasionally,for 5
minutesoruntilsoftened.Stirinpaprika.
4 Meanwhile,scrubcarrotandparsnips;
leaveunpeeled.Thinlyslicehalfofone
parsniplengthways.Coarselygratethe
remainingparsnipsandcarrot.Combine
gratedvegetables,eggs,stock,1¼cups
cheddar,lentilsandonionmixtureina
largebowl;season.Spoonmixtureinto
preparedpan;spreadandlevelwiththe
backofa spoon.Topwithslicedparsnip
andremainingcheddar.Coverwith
greasedfoil.Scrunchfoilaroundsides
ofpantosecure.
5 Bakeloaffor 30 minutes.Remove
foil;bakefora further 30 minutesor
untilgolden.
6 Standloafinpanfor5 minutesbefore
turning,top-sideup,ontoa board.
Coolfor 15 minutesbeforeslicing.
Serve with salad leaves and relish.
