Spread a hot slice
of toast with 2tbsp
beetroot dip or
hummus, top with
½ sliced avocado,
25g crumbled feta
and a sprinkle of
pomegranate seeds
and olive oil.

Roasted
balsamic

ricotta
Preheat oven to
200°C (180°C fan)
mark 6. In a small
roasting tin, cook 75g
cherry tomatoes on
the vine with 1tbsp
balsamic vinegar,
1tbsp olive oil and
some seasoning for
10min until beginning
to burst. Spread 2tbsp
ricotta over a hot slice
of toast and top with
warm tomatoes, a few
basil leaves and some
freshly ground black
pepper. Drizzle over
some cooking juices
from the tin.
