Icreated this as a twist on the traditionalbreakfast sandwich.âKELLY BOE WHITELAND, INPREP: 30 MIN. ⢠BAKE: 15 MIN.MAKES: 6 SERVINGS2 ¹�â cups biscuit/baking mix¹�â cup 2% milk3 Tbsp. butter, melted1 to 2 Tbsp. minced fresh chivesEGGS6 eggs2 Tbsp. 2% milk¹�â tsp. salt2 oz. thinly sliced prosciutto or deliham, cut into strips2 green onions, chopped1 Tbsp. butter¹�â cup shredded cheddar cheese1. Preheat oven to 425°. In a bowl,combine biscuit mix, milk, meltedbutter and minced chives; mix justuntil moistened.2. Turn dough onto a lightly flouredsurface; knead gently 8-10 times. Pator roll to ¾-in. thickness; cut with afloured 2½-in. biscuit cutter. Place2 in. apart on an ungreased bakingsheet. Bake 12-14 minutes or untilgolden brown.3. Meanwhile, in a large bowl, whiskthe eggs, milk and salt. Place a largeskillet over medium heat. Add theprosciutto and green onions; cookuntil prosciutto begins to brown,stirring occasionally. Stir in butteruntil melted. Add egg mixture; cookand stir until eggs are thickened andno liquid egg remains. Stir in cheese;remove from heat.
