One of the most interesting

techniques in the production

of sweet wines is the “noble

rot”, in which a fungus is

allowed to take over the grapes,

which are then exposed to

drier conditions to concentrate

the flavours. Perfumers use

different techniques to increase

the potency of their botanicals,

but the goal is the same: a rich,

invigorating experience.

Château d’Yquem Sauternes

wines are produced using the

noble rot method. Depending

on the vintage, the flavours and

aromas vary from fresh and

blossomy to those that evoke

coffee. In a fragrance, these

associations can be comforting.

Veuve Clicquot Demi-Sec,

a sweet champagne, has scents

of candied fruits and notes

of brioche. Once decanted,

it becomes weightier, with the

aroma and flavours changing

as the wine oxidises. It’s similar

to how fragrances adapt as you

wear them, as the compounds

react to the air and your skin.
