WAFFLES WITH CRANBERRY SYRUP ACTIVE: 25 min l TOTAL: 25 min l SERVES: 4 to 6
1 cup pure maple syrup
¾ cup cranberries (fresh or frozen)
½ teaspoon pure vanilla extract
2 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
2 large eggs
1½ cups milk
5 tablespoons shortening, melted
4 tablespoons unsalted butter, melted,
plus more butter for topping
Cooking spray, for the waffle iron
- Make the syrup: Combine the maple
syrup, cranberries and vanilla in a small
saucepan. Bring to a simmer over medium
heat and cook, stirring occasionally, until
the berries pop, about 10 minutes. - Meanwhile, make the waffles: Whisk the
flour, baking powder, sugar and salt in a large
bowl. Mix in the eggs, milk, melted shortening
and melted butter until well combined.
3. Preheat a waffle iron.
Lightly spray with cooking spray.
Ladle the batter into the waffle iron
and cook according to the
manufacturer’s instructions until
the waffles are browned and crisp.
Repeat with the remaining batter.
Top the waffles with butter and the
cranberry syrup.
