- 1 mediumfree-range egg,
separated - 1-2tbspicedwater
- 50ggroundhazelnuts
- 50g unsalted butter, softened

- 2 bloodoranges
- 2 tbsp maple syrup or honey

- 1-2cardamompods,seeds

powderina pestleand mortar - 1 tbsp icing sugar

1 Finelygratethezestof1 orange
andsetasideforthepastry.Peel
4-6oranges(dependingontheir
size),includingthezestedone,
makingsureyoucutoffand
discardallthebitterpith. Thinly
slice all the oranges.
2 Tomakethepastry,briefly
pulsetogethertheflourand100g
unsaltedbutterina food
processoruntilthemixture
resemblesbreadcrumbs.Add
50gofthesugar,thegrated
orangezest,theeggyolk
(reservingthewhite)and
1-2tbspicedwater.Pulseagain
untilthemixturejuststarts
tocometogether.Transfertoa
clean,lightlyflouredsurfaceand
gentlyworkintoa dough.Shape

3 Heattheovento220°C/200°C
fan/gas7. Fortheorangesyrup,
squeezethejuicefrom2 oranges
intoa smallsaucepan,addthe
maplesyruporhoney,then
simmerovera mediumheatfor
5-6minutesoruntilthesauce is
syrupy.Setasidetocool.
4 Rolloutthedoughona lightly
flouredsurfacetoa rough
30cmcircle,thentransferit
tothepreparedbakingsheet.
5 Putthegroundhazelnuts,50g
softenedunsaltedbutterandthe
remaining50gsugarina mixing
bowl.Usinganelectricmixer,
whiskuntilpaleandfluffy– about
