overa mediumheat.Addtheoliveoil,
thenthefennelandpotatoes.Season
lightlywithsaltandblackpepperand
cookgentlyfor6-8minutesuntil
softenedandalmosttenderbutnot
coloured.Addthevegetablestock
andbringtoa lowsimmer.
2 Meanwhile,prepareyourbroad
beans:largerbeans,particularly
thosethathavedevelopeda black
eye,canbetoughandwillbenefit
frombeingcookedinboilingwater
for1-2minutesbeforebeingpeeled.
Young,smallerbroadbeanscanbe
putstraightintoa bowlwiththe
poddedpeas.Removeanydamaged
orunwantedouterleavesfromthe
lettuce,thenwashandshredinto
1-2cmpieces.Setaside.Pickthe
softherbsfromtheirstalksand
chopthemfinely.Chopthechives
(ifusing)asfinelyasyoucan.
3 Makesurethebrothissimmering,
thendropinthecourgette,broad
beans,peas,sugarsnapsandspring
onions,thencookfor2-3minutesto
soften.Addtheshreddedlettuceand
cookfora further2 minutes,then
stirintheherbsanda squeezeof
lemonjuice.Seasontotastewith
salt and a grinding of black pepper.

4 Ladlethesoupintowarmbowls.
Garnishwiththebroadbeanorpea
topsandpeaandchiveflowers(if
using)andtricklewith olive oil
beforeserving.

Therearea coupleof
importantstagesthathelpthis
omelettestandout.Thefirst
iscookingthepotatoes– give
themenoughtimeinthepan
tocollapseinthehotoliveoil
beforeyoustirthemintothe
eggs.Secondly,letthepotatoes
resttosoakuptheeggs.You
shouldn’tbeabletotellwhere
theeggbeginsandthepotato
ends.Thetwoshould (almost)
become one

  • 6 mediumBritishfree-rangeeggs

  • 300mlextra-virginolive oil

  • 1 onion,thinlysliced

  • 500gnewpotatoes, cut into
    2-3mmslices

  • 4 smokedgarliccloves, thinly
    sliced (see tip)

    • 1 tspfreshthymeleaves

    • 1 tbspchopped fresh flatleaf
      parsley

    • 75gcheddar,grated

    • Green salad to serve (optional)




1 Cracktheeggsintoa mixingbowl,
butdon’twhiskthem.Setasideto
rest.Puta largefryingpanover
a low-mediumheatandaddthe
oliveoil.Whenit’swarm,addthe
onionandcook,stirringregularly,
for6-8minutesuntilsoftenedbut
notbrowned.Addthepotatoslices
andcook,turningoccasionally,for
15-20minutesoruntilthepotatoes
arejustbeginningtobreakup.Add
thesmokedgarlic,thymeand
parsley,thencookfora further
1 minuteorso.Usea slottedspoon
toliftthepotatoandonionmixture
outofthepanintothebowlwith
theeggs.Removethepanfromthe
heat,reservingthecookingoil.
2 Addthecheeseandplentyofsalt
andpeppertotheeggbowl,stirring
welltobreakuptheeggs.Letthe
mixturerestfor15-20minutes.
3 Seta mediumnon-stickpanover
a mediumheat.Adda dashofthe
reservedcookingoilandwipeit
aroundthepanwithsomekitchen
papertocoat(youcansetasideany
remainingcookingoilforanother
time).Spooninthepotatoandegg
mixtureandgivethepana little
shaketoeveneverythingout.Cook
for3 minutes,thenturnuptheheat
andcookfora further1 minuteor
sountiltheomeletteisbeginningto
firmupontheunderside.Puta flat
plateoverthetopofthepanand
carefullyflipthepan,invertingthe
omeletteontotheplate.Returnthe
pantotheheatandgentlyslidethe
omelettebackintoit.Cookfor
3 minutesona mediumheat,then
for1 minuteorsoona highheat
untilcookedthroughandgolden.
4 Slidetheomeletteontoa plate
andallowit torestforatleast
5 minutesbeforeservingwith
a dressedgreensalad,if youlike.
