GAR AM MASALA
SPICY SMASHED POTATOES
Put 500g new potatoes in a pan of water
and boil for 12-15 minutes until tender.
Drain and steam dry for a few minutes. Tip
the potatoes onto a baking tray and crush
slightly to rough up the edges. Drizzle with
2 tbsp vegetable oil and 3 tsp garam
masala, toss to coat, then roast for 30-40
minutes at 200°C/180°C fan/gas 6 until
golden and crisp, shaking halfway through.

Whisk4 mediumfree-rangeeggsandadd
to the pan. Mix in gently to combine, then
cook to your desired consistency. Serve
on hot buttered toast.

GROUND CINNAMON
CINNAMON CAKE CRUMBLE
Rub together 30g cubed cold butter, 50g
plain flour and a pinch of salt until the mix
resembles breadcrumbs. Stir in 30g soft
brown sugar and ½ tsp ground cinnamon.
Sprinkle over the top of your favourite cake
when it has 15 minutes left of baking time
for a sweetly spiced crumble topping.

ODDS AND ENDS FROM THE SPICE CUPBOARD
There are the spices you use all the time, then there are those you buy, use once,
then banish to the back of the cupboard, never to see the light of day again.
From favourites like cinnamon to the less-often-used such as a Mexican spice
blend, spices of all kinds come into their own when you’re using them with
ingredients that are slightly past their best.


Whisk 175g self-raising
flour, 1 tsp baking powder,
1 tsp ground cinnamon,
4 tbsp caster sugar,
1 medium free-range egg
and 225ml whole milk until smooth.
Leave for 30 minutes to rest. Heat a
splash of oil in a frying pan and cook
a small ladleful of pancake batter
for a few minutes on each side until
golden. Repeat with the rest of the
batter. Serve with sliced banana,
sprinkled with extra ground cinnamon.
