ofa 23cmspringformtin.Chilluntilfirm.
Put500gfull-fatcreamcheese(weuse
Philadelphia)ina largemixingbowlwith
225gcastersugar,thenwhiskwithan
electricmixeruntilsmooth.Gradually
beatin3 mediumfree-rangeeggs,then
add2 tbspcornflour,1½tbspvanilla
beanpasteand100gcrèmefraîcheand
whiskagainuntilwellcombined.Pour
themixtureoverthebiscuitbase,then
bakefor55-60minutesat150°C/130°C
fan/gas2 – it shouldstillhavea slight
wobbleinthemiddle.Coolcompletely,
then serve with seasonal fruit.
