Rivercabernets,pitch-perfectmedium-
weightredsthatbroughtsweetnessto
mildcurries.Heshowedmetexturalwhites
maturedin oak,chardonnayincluded,that
hadanopulencethatsettledin gloriously
withcreamiercurries.Thedisheswith
moreheatwereperfectlybalancedbytwo
polesofwine:firstly,aromaticandfruity
gewürztraminerwasa treat,butfleshy,
full-flavouredredswerea revelation.
Unusually,thingslikeBarossashirazor
blendswithgrenachewereparticularly
friendlywithdishesthatwentfromwarm
throughtoeye-wateringlyhot.
Shah’svisionmaybea littleharderand
fasterthanmost,butkudosforhiswork
elevating the Indian dining experience.
