1kgbonelessporkbelly (skin on)
2 tbsrunnyhoney
1 tbsChinesefive spice powder
1 tbstamari
1 tbs sesame oil


Placeporkbelly,skin-sideup,ona wire
rackoverthesink.Pourover2 cups
(500ml)boilingwatertoscaldthepork
skin(thiswillhelptheskincrispup
intocrunchycrackling).Patskindry
thoroughlywithkitchentowelandplace
pork,uncovered, in refrigerator for
2 hours.
Tomakethemarinade,combinethe
honey,fivespiceandtamariin a bowl,
seasontotasteandstirtocombine.
Removeporkfromfridgeandrub
marinadeevenlyoverthefleshsideof
thepork(donotrubintoskin).Placepork,
skin-side up, on a chopping board. Using


thetipofa sharpknife,makeincisionsall
overskin,beingcarefulnotto score all the
waythroughtotheflesh.
Placepork,skin-sideup,onan
ovenproofwirerackthatwillfitinsidea
roastingpan.Placerackovera trayorlarge
platetocatchanydripsandtransferto
refrigerator.Leaveporkuncovered
overnightforskintodryout(thedrier
theskin,thebetterthecrackling).
Thenextday,bringporktoroom
temperatureandpreheatovento220°C.
Transfer pork and wire rack to a roasting

pan.Rubskinwellwiththesesameoil
andscatteralloverwith1 tbssaltflakes.
Roastfor 15 minutes,thenreduceovento
150°C.Roastfora further1 hourto1 hour
30 minutesoruntiltender(totest,pierce
themeatwitha skewer;youshouldfeelno
resistance).Increaseovento220°Cand
roastfora further 15 minutesoruntilthe
porkhascracklingallover(theedgesof
theporkwillblackenandcaramelise).
Removeporkfromovenandrest,
uncovered,in a warmplacefor15 minutes.
To serve, cut into 1cm slices.
