DIPPINGSAUCE
2 tbsricewinevinegar
1 tspgratedginger
1 tspsesameoil
1 tbsrunnyhoney
2 long green shallots, thinly sliced
Preheattheovento220°C.Combine
tamarind,garlicanddatein a smallfood
processorandwhizuntilsmooth.Transfer
toa largebowlwithfishsauce,soy,oil,
limejuiceandhoney,andcombinewell.
Addthewingsandtossin marinade to
cover.Refrigeratefor1 hour.
Cuteachsliceofbaconin half
widthways.Wrapeachchickenwingin
baconandplace,seam-sidedown,ona
largebakingtraylinedwithbakingpaper.
Roast,turningwingsevery 15 minutes
andbastingwithanyremainingmarinade,
for 45 minutesoruntilstickyandgolden.
Forthedippingsauce,combineallthe
ingredientsin a smallbowl.Scattershiso,
if using,overchickenwings and serve
with dipping sauce.

11 / 2 cups(375ml)drysherry
(^1) / 4 cup(60g)brownsugar
2 tbssherryvinegar
200gfennel,frondsreserved,
thinlyslicedintorounds
1 bayleafsprig
1 tspfennelseeds,crushed
600gpiecebacon,rindon
(fromspecialtybutchers)
1 cup(200g)pearlbarley
400gcancherrytomatoes
1 punnetcherrytrusstomatoes
(^1) / 4 cup chopped dill, to serve
Preheatovento200°C.Placesherry,
sugar,vinegar,fennel,bayleavesand
fennelseedsin a largedeep-sided
roastingpanandcombinewell.Cutthe
baconinto4 thickslicesandplaceontop
ofthefennelmixture.Covertightly with
foilandroastfor 45 minutes.
Removebaconfromthepan,addthe
barley,tomatoesand1 cup(250ml)water,
andcombinewell.Returnbacontopan
ontopofbarleymixtureandcovertightly
withfoil.Returntoovenandroast fora
further1 hour.Uncoverandroastfora
further 20 minutesoruntilbarleyis tender
andbaconis goldenandcaramelised.
Meanwhile,placecherrytrusstomatoes
ona bakingtrayandroastforfinal
20 minutesofbaconcookingtime.Divide
braisedbaconandbarleyamongbowls
andtopwithdill,fennelfronds,freshly
groundblackpepperand roasted
tomatoes to serve.
