700gbutternutpumpkin, peeled,
seedsremoved
2 squaresfrozen puff pastry, thawed
3 eggs

groundcinnamonandgroundginger
(^1) / 2 cup(125g)firmly packed cup
brownsugar
11 / 2 tbssmokedmaplesyrup
(fromspecialtyfoodstores)
Pure (thin) cream, to serve
Preheatovento200°C.Tomakebutternut
pumpkinpuree,cutpumpkininto10cm
chunks.Placeona largebakingtrayand
roast for 1 hour or until tender and lightly

120gunsaltedbutter, chopped,
softened
2 largeeggs
(^2) / 3 cup(165ml)buttermilk,
atroomtemperature
11 / 3 cups(200g)self-raisingflour, sifted
(^1) / 2 tspgroundcinnamon
(^1) / 4 tspgroundnutmeg
150g roasted pumpkin puree
SPICEDFROSTING
180gunsaltedbutter,softened
125gpureicingsugar,sifted
(^1) / 2 tsp ground cinnamon
Preheatovento180°Candgrease a
6-holeTexasmuffinpan.
Placehalfhoneyandbutterin a stand
mixerwithpaddleattachmentandbeat
untilpale.Addeggs,1 at a time,beating
wellaftereachaddition,untilcombined.
Foldthroughbuttermilk,flour,spices,a
pinchofsaltflakesandpumpkinpuree.
Divideamongmuffinpanholesandbake
for 35 minutes.Coolcompletely.
Forfrosting,placeallingredientsin the
cleanedstandmixerandbeatuntilpale
andfluffy.Spreadovercooledmuffins.
Placeremaining^1 / 2 cup(125ml)honey
in a saucepanandcookfor2-3minutes
oruntilslightlydarkened.Standtocool
for 10 minutes. Drizzle over icing to serve.

Meanwhile,greasebaseandsideofa
22cmroundloose-basedtartpan.Press

edgesin (thiswillgivea rusticeffect).Prick
pastrybasealloverwitha forkthenchill
for 30 minutestorest.Linewithbaking
paperandpastryweights,thenbakefor
20 minutes.Removeweightsandbaking
paper,andbakefora further 15 minutes
oruntilpastryis goldenanddrytotouch.
Setasidetocool.Reduceovento160°C.
Tomakethefilling,placepumpkin
puree,eggs,spices,sugarandmaple
syrupin a bowl,whiskuntilsmooth.Pour
pumpkinmixtureintotartshellandbake
for 45 minutesoruntilfillingis setbuthasa
slightwobble.Standona wirerackuntil
cooledcompletely,thenchillfor2 hoursor
until cold and set. Serve with cream.
