PISTACHIO SEMIFREDDO

Dryoutthevanillapodonawirerack
overnighttouseinthesweetplumsauce
recipe (p 130) used in the baked ricotta
cheesecake(p131).Beginthisrecipe1day
ahead. You will need a sugar thermometer.
1 vanillabean,split,seedsscraped
350mlthickened cream
5 egg yolks, plus 2 eggwhites
200gcaster sugar
100g white chocolate, chopped
200gpistachios, finely chopped, plus
extra chopped to serve
Grease a 4-cup (1L) loaf pan and line with
baking paper, leaving 5cm overhanging
theedges.Placevanillaseedsandcream
in a stand mixer fitted with the whisk
stirringconstantly, until sugar is dissolved.
Bringtotheboilandcook,withoutstirring,
untiltemperaturereaches115°Conasugar
thermometer. At this point, start whisking
theeggwhites.Continueboilingthesugar
mixture until temperature reaches 121°C.
With the motor running, gradually add
sugar mixture to eggwhites in a steady
stream until completely combined.
Continuewhiskingfor5minutesor until
cooled to room temperature.
Foldthe white chocolate and pistachios
into the egg yolk mixture. Fold in the
meringue,thenfoldthroughvanillacream.
Pourmixtureintothepreparedpan,
smooth the surface, then freeze overnight
oruntil frozen.
To serve, leave at room temperature for
10minutesbeforeremovingfromthepan.
Scatter with extra pistachios and use a hot
knife to cut into slices.

the egg yolks. With the motor running,
gradually add sugar mixture to egg yolks in
asteadystreamuntilcompletelycombined.
Continuewhiskingfor5minutesoruntil
cooled to room temperature. Transfer egg
yolkmixturetoacleanbowl.
To make t he mer ingue, place eggw hites
in the cleaned stand mixer fitted with the
whiskattachment.
Placeremaining140gsugarand2tbs
water in a saucepan over high heat. Cook,
