oddandI hadnevertriedonebefore.
I wasimmediately intrigued and had
toorderit.
ThoughI wasdubiousasI ordered,
it wasloveat firstbitewhenit arrived.
Thevinegargaveit a tartness;it’sthe
samethinglemonsdotoa pie!I didsome
researchwhenI returnedhomeandfound
thatwhenmakingdesserts,19th-century
Americanshadtomakedowithwhatever
staplestheyhadtosubstituteforhard-to-
getingredientssuchaslemonsandother
freshfruit.Vinegarwasreadilyavailable
yearroundandsothevinegarpiewas

1 tspvanillapasteor^1 / 2 tsp vanilla
essence

(^1) / 2 cup(125ml)thickenedcream
110gunsaltedbutter
(^3) / 4 cup(175g)caster sugar
2 tbsplainflour
(^1) / 4 tspseasalt
3 eggs,lightlybeaten
2 tspapplecidervinegar
(^1) / 4 cup (90ml) runny honey

Preheattheovento160°Cfan-forced.
Greasea 22cmflutedloose-basedtart

linewithbakingpaperandaddbaking

Blindbakefor15-20minutesuntilthe
sidestartstogolightgolden.Remove
bakingweightsandpaperandreturnto
theovenfor 10 minutesoruntilthe pastry
isgoldenanddrytotouch.
Tomakethefilling,mixtogetherthe
vanillaandcreamina heatproofbowlset
overa potofboilingwater.Turntheheat
downandallowtostandfor 20 minutes.
Removethevanillamixturefrom
theheatandsetaside.Ina separate
heatproofbowl,addthebutterandplace
overa potofboilingwatertomelt.Set
asideandallowtocoolfor5 minutes.
Ina largeseparatebowl,whisk
togetherthesugar,flourandseasalt.
Stirinthemeltedcooledbutteruntil
combined.Whiskingrapidly,slowly
pourintheeggsfollowedbythevanilla
cream.Addthevinegarandhoney,and
pourthemixtureintothebaked pie
shell,whiskingasyoupour.
Bakefor35-40minutes,rotatingthe
pantwice,untilthepieis goldenbrown
ontop,slightlypuffedwitha slight
wobbleinthecentre.Allowtocoolin
thefridgefor1 hour, or 3 hours at room
temperature.
Meanwhileforthespicedcream,place
alltheingredientsina standmixerfitted
withthewhiskattachmentandwhisk
untilstiffpeaks.Refrigerateuntilready
toserve.Slicethepieandservewitha
dollop of the spiced whipped cream.
