250gdriedcannellinibeans
75gskin-onalmonds(unblanched)
25gpumpkinseeds
4 largeredpeppers(capsicum)
4 tbsextravirginoliveoil
1 tspsmokedpaprika
Pinchofdriedchilliflakes (optional)
3 rosemarysprigs
1 onion,thinlysliced
2 garlic cloves, thinly sliced
Soakbeans,almondsandseedsfirstthing
inthemorning– theywantatleast
4-6hoursimmersedin water.Youcansoak
thealmondsandpumpkinseeds together,
butkeepthebeansseparate.
Heattheovento220°C.
Drainthesoakedbeans,placein a large
panandcoverwithcoldwater.Bringtothe
simmerandcookfor35-40minutesuntil
theyaretender.Drainina colanderset
overa bowl,reserving the cooking liquid.
Setaside.
Meanwhile,placethepeppersona
bakingtrayandroastin thehotovenfor
30-40minutesuntilthefleshhassoftened
andtheskinhasblistered.Transferthe
cookedpepperstoa heatproofbowland
coverwitha cleancloth.(Thiswillhelpto
loosentheskins,makingpeelingeasier.)
Whilethepeppersareroasting,drain
thealmondsandpumpkinseedsandplace
themina smallroastingtray.Drizzlewith
1 tbsoliveoil,sprinklewithsmokedpaprika
andchilliflakes,if using,andtearoverhalf
therosemary.Seasonwithsaltandpepper
andtumbleeverythingtogether.Bakefor
10-12minutes,stirringonce during
cooking,untiltoasted.

a littlesaltandpepper.Choptheleaves
fromtheremainingrosemaryandadd
thistothepan.Stirregularlyand,when
onionandgarlicaresoftandsweet
(about8-10minutes),addthebeansand
stirwell.Add300mlofthebeancooking
liquidandbringtoa gentlesimmer.
After5 minutesorso,smashthebeans.
I dothiswitha hand-heldstickblender,
butyoucouldsimplysquashthemwitha
potatomasher.Youwanta creamy,yet
texturedconsistency. Season well and
keepwarm.
Removethepeppersfromthebowl,
peelawaytheskinsanddiscardin the
compost.Halvepeppersandremove
seeds,thenseasonwithsaltandpepper
anddrizzleovertheremainingoliveoil.
Spoonoutthebashedbeansontoa
warmedplatter,arrangethepeppersover
thetopandsprinkleoverthetoasted nuts
and seeds. Serve at once.
