1¼ ounces bourbon
¾ ounce carrot juice
½ ounce fresh lemon juice
¼ to ½ ounce date syrup
3 dashes of orange-fig
bitters
Sage leaf, for garnish
- Combine the bourbon,
carrot juice, lemon juice,
date syrup and bitters in a
shaker with ice; shake well. - Strain the cocktail into a
coupe glass. Garnish with
a sage leaf.

Coarse black salt, for the glass
ounces silver tequila
ounce green juice
ounce fresh lime juice
ounce agave syrup
Kale leaf, for garnish
Dip the top 2 inches of a
mason jar in water and roll in
black salt to coat.
Combine the tequila, green
juice, lime juice and agave in a
shaker with ice; shake well. Strain
into the prepared jar; add ice.
Garnish with a kale leaf.

MAKES: 1 (plus extra beet syrup)
2 cups sugar
73 cup honey
73 cup apple cider vinegar
3 large beets, peeled and roughly chopped
1 ounce fresh lime juice, plus lime wedge
for garnish
1 ounce mezcal
2 ounces seltzer
1 ounce ginger beer
- Make the beet syrup: Bring 1 cup water, the
sugar, honey and vinegar to a simmer in a small
saucepan. Simmer until the sugar dissolves,
about 10 minutes. Add the beets and simmer
until softened, about 20 minutes. St rain
through a fine-mesh sieve and let cool. - For each cocktail: Combine% ounce beet syrup,
the lime juice and mezcal in a shaker; shake well.
Strain into an ice-filled glass. Add the seltzer and
ginger beer. Garnish with a lime wedge.
