ICE CREAM ENCHILADAS
ACTIVE: 35 min l TOTAL: 1 hr l SERVES: 6 to 8
6 to 8 store-bought crêpes
1 1½-quart rectangular container
vanilla ice cream
1 cup orange candy melts
1½ cups strawberry fruit spread or
ice cream topping
Red food coloring
1 to 2 ounces white chocolate
(from a 4-ounce bar)
Chopped fresh mint, for topping
There’s a surprise inside
these enchiladas: ice cream!
e’ve all had our share of
hot and spicy enchiladas, so
this time we made them cold
and sweet! To create these enchilada
look-alikes, we used crêpes instead
of tortillas, ice cream for the filling
and strawberry topping as enchilada
sauce. The Mexican cheese blend on
top is actually a mix of shaved white
chocolate and orange candy melts!
