8 largespringgreensorlargegreen
cabbageleaves(about 250 gm)
240 gmpickledbeetroots,sliced,
plus1 tbspbrine
2 tbspextra-virginolive oil
2 avocados,stoned
2 tbsptahini
½ roastedchicken,meat shredded
(about250gm)
24 basilleaves
80 gm mixed sprouts


1 Rinsericeina largesaucepanuntil
waterrunsclear.Drainandreturnrice
topanwith360mlwater.Bringtothe
boil.Coverandreduceheattomedium-
lowandsimmeruntiltenderandthe
wateris absorbed(35minutes).Remove
fromheatandleavefor5 minutes.
Alternatively,cookina ricecooker
accordingtoinstructions.
2 Meanwhile,preparespringgreens.
Laya leaf,ribsideup,andcarefully
shaveoffroundedpartofribwitha
paringknifeheldparalleltothechopping
board.Thiswillmakeit easiertowrap.
Continuewithremainingleaves.Prepare
anicebathina largebowl.Bringa large
saucepanofsaltedwatertotheboiland
blanchspringgreensfor 10 seconds,
oruntilpliableandbrightgreen,then
transfertoicebathtocool.Drain and
layonkitchenpaper.Patdry.
3 Placepicklebrine,1 tbspoftheolive
oil,½tspsaltand½tsppepperina small
bowlandwhisktocombine.Pourover
riceandfluffwitha fork.Scoopout
avocadoandplaceina bowl.Addtahini
and½tspsaltandmashwitha forkuntil
combined.Addremainingolive oil to
loosenif tahiniis veryfirm.
4 Laya springgreenleafwiththelong
sidetowardsyou,shavedribup.Spread
aneighthoftheavocadomixinthe
centre, leaving 5cm on the right and


leftsides.Layeraneightheachofthe
remainingingredients:rice,slicedbeet,
chicken,basilandsprouts,andseason.
Rollthelongendoveronce.Foldright
andleftsidesinandcontinuerollingthe
longsideover.Continuewithremaining
spring greens and ingredients. Serve.➤
