freekeh and a creamy tahini dressing provide the feel-good vibes.

2 bunchesrocket,thinly

1 cupflat-leafparsley,torn
1 cupmint,torn
1 springonion,thinlysliced
3 celerystalks,thinlysliced
1 apple,cutintomatchsticks
Groundlinseed,toserve
Coarselychoppedtamari
almonds,toserve
Slicedavocadohalvesand
poachedeggs,toserve
TAHINI-LEMONDRESSING
60 ml(1/4cup)lemon juice
(ortotaste)
11/2 tbsptahini
2 tbspextra-virginolive
oil (or to taste)

1 Cookfreekeh ina saucepan
ofboilingwateruntiltender
(15minutes).Drain,then
spreadon a trayandcool.
2 Fortahini-lemondressing,
whiskingredientsina bowl
andseasontotaste,adding
extralemonjuiceoroilto
taste.If tahiniis toothick,
adda littlewatertoloosen.
3 Combinerocket,herbs,
springonion,celeryandapple
ina bowlandtosstocombine.
Addfreekeh anddressing,
tosswelltocoat,thenscatter
overlinseedandalmonds.
Divideamongbowlsand
servesaladtopped with egg
and avocado.

Coconut lentil dhal with barramundi
SERVES 4
Dhalis theultimatecomfortfoodand,inthisversion,coconut
milkaddsrichnesstothedish.Servewithyourchoice of fish,
lime halves and a final sprinkling of curry leaves.

2 tbspghee
4 barramundifillets(150gm
each)orotherwhite-flesh
fish,skindriedthoroughly
Friedcurryleaves, to serve
LENTILDHAL
1 tbspghee
1 onion,diced
2 curryleafsprigs,
leavespicked
400 mlcannedcoconutmilk
250 ml(1cup)chickenstock
orwater
175 gmgreenlentils,rinsed
2 largeripetomatoes,diced
1 tbspmildIndian-style
currypowder
Limehalves,forsqueezing,
plus extra to serve

1 Preheatovento 180 °C.
Forlentildhal,heatgheein a
saucepanovermedium-high
heat.Addonionandfry,stirring
occasionally, untilsoftened
(5-6minutes).Addcurryleaves
andstiruntilfragrant(1 minute),
thenaddremainingingredients,
bringtoa simmerandcook,
stirringoccasionallyand
toppingupwitha littlewater
asnecessary,untillentilsare
tender(20-25minutes).Season
totastewithsaltandlimejuice.
2 Meanwhile,heatgheein a
non-stickorwell-seasoned
ovenprooffryingpanover
medium-highheat.Addfish,
skin-sidedown,topwithbaking
paper,weightwitha heavy
pan,andfryuntilskinis golden
brownandcrisp(3-4minutes).
Turnfish, transferpantooven
androastuntilfishis justcooked
through(3-5minutes).
3 Dividedhalamongplates,top
eachwithfish,thenfriedcurry
leaves, and serve with lime.
