130 gmbabyspinachleaves
2 cupscoriander
3 springonions,thinlysliced
2 garliccloves,crushed
2 tspfinelygratedfreshginger
2 tbspshiro(white)miso
2 tspsesameoil
60 ml(¼cup)lemonjuice
180 gmgreen-teasobanoodles
200 gmfrozenpodded edamame,
defrosted


1 Placechickenin a saucepanofboiling
saltedwater,reduceheattolowthen
simmeruntiljusttender(10minutes).
Transferchickentoa plateandstand
untilcoolenoughtohandle,then
coarselyshred.Reservepoachingliquid.
2 Meanwhile,forgreenmisosauce,
reservea smallhandfulspinachand
¼ cupcorianderforserving.Place
remainingspinachandcoriander,
2 springonions,garlic,ginger,miso,
sesameoil,lemonjuiceand160ml
(⅔cup)reservedpoachingliquidin
a largejugandblendwith a stick
blender until smooth.

3 Add1 litre(4cups)watertothe
saucepanwiththepoachingliquidand
bringtotheboil.Addnoodlesandcook
untilalmosttender(3minutes)thenadd
edamameandcookuntilbrightgreen
andtender(1 minute).Drain,rinseunder
coldrunningwater,drainwelland
transfertoa largebowl.Addreserved
spinachandcoriander,shreddedchicken
andmisosaucetothenoodlemixture
andtosstocoatwell.Seasonwithsalt
andpepper.Sprinklewithremaining
spring onionto serve.➤
