Thisis a versionofthesimplefishermen’sclassicwherefishorseafoodis poachedin
“crazywater”,so-calledbecausethecolourofthepoachingliquidremindedthemof
peasants’homemadewine.Makesurethebrothis wellseasonedbeforeaddingthefish.

2 kgripetomatoes,coarselychopped
5 garliccloves,1 coarselychopped,
4 thinlysliced
1 cupfirmlypackedbasilleaves
1 tspcastersugar
60 ml(¼cup)extra-virginoliveoil
2 babysnapper(600gmeach),cleaned
2 longredchillies,finelychopped
125 ml(½cup)drywhitewine
2 babyfennelbulbs,thinlysliced,
frondsreserved
400 gmmixedcherryandgrape tomatoes
4 thymesprigs
½ cupmarjoramleaves
Char-grilled sourdough, to serve

1 Blendchoppedtomato,chopped
garlic,basilandsugarwith1 tspsalt
flakesina blenderuntilcompletely
smooth,thenstrainthrougha finesieve
overa largesaucepan.Pushliquid
throughusinga ladleandsetaside.
2 Heatoilina largeheavy-based
saucepanovermediumheatand
cookfishuntilgolden(4minutes
eachside).Seasonfish and set aside
ona largeplate.
3 Addslicedgarlicandchillitopan
andcookuntilsoftened(4minutes).
Add wine, cook until evaporated

(1 minute),thenaddfennel,tomatoes,
thymeandmarjoram.Coverwith1 litre
(4cups)tomatoliquid,bringtotheboil
andseasontotaste.Returnfishtopan,
reduceheattolowandcook,covered,
untilfishis almostcooked(10minutes).
Uncoverandsimmeruntiljustcooked
through(5minutes).Serve with char-
grilled sourdough.

1.5 kglargerawkingprawns
3 garliccloves,finelygrated
2 cupsmintleaves
1 cupflat-leafparsleyleaves
1 cupcorianderleaves
125 ml(½cup)oliveoil
1 tbspredwinevinegar
1 tspdriedchilliflakes
Lemon wedges, to serve

1 Inserta largesoakedwooden
skewerthroughthecentre of each
prawnlengthways.
2 Formarinade,processgarlicand
herbsina foodprocessoruntilfinely
chopped.Withmotoroperating,addoil,
vinegarandchilliflakes.Tossprawns
skewerswith⅔cupmarinadeand
reserveremainingmarinadetoserve.
3 Heata char-grillpanorbarbecue
tohigh.Cookprawns,inbatchesif
necessary,untilcookedthroughand
fleshis opaque(1 minuteeachside).
Serveprawnswithremaining marinade
