300 mlwhitewine
200 mlchickenstock
100 gmSwissbrownmushrooms
1 tspthymeleaves
2 heapedtbspmascarpone
Mashedpotato (optional),
to serve
1 Heatoilin a casserole
overmedium-highheat,
addchickenandfry,turning
occasionally, untilgoldenall
over(4-5minutes). Transfer
to a plate.
2 Addoniontopanandfry,
stirringoccasionally, untiljust
softened(5minutes).Addgarlic
androsemary, stirtocombine,
thendeglazepanwithwineand
stock, scrapingbaseofpan.
3 Reduceheattomedium,
returnchickentopan, season,
thencoverandsimmer, turning
occasionally, untilcooked
through(15minutes).Add
mushrooms,re-cover, andcook
