Chineseroastduck,availablefromChinesebarbecueshops,
is a greatbasetobuilda mealaround.Tryit shreddedand
tossedthrougha citrusysalad,ina curry, or served with
egg noodles, as we’ve done here.

500 gmfreshthineggnoodles
40 gmginger,shredded
2 springonions,thinlysliced,
plusextrashredded to serve
1 tbsppeanutoil
80 ml(⅓cup)lightsoy sauce
1 tbspsesameoil
½ Chineseroastduck,chopped
Thinlysliced birdseye chilli,
to serve

1 Cooknoodlesina large
saucepanofboilingwateruntil
al dente(2-4minutes).Drain.
2 Combineginger,thinlysliced
springonion, peanutoil, soy
sauceandsesameoilina bowl.
3 Dressnoodleswithenough
gingerandspringonion
dressingtocoat,topwithduck,
scatterwithchilliandshredded
springonionandservewith
remaining dressing.
