1 Preheatovento140°C.
2 Preheata smallcasserole
overhighheat.Addoil,thenseal
brisket,turning,untilbrownedall
over(4-5minutes).Removefrom
panandsetaside.Addchillies,
gingerandgarlictopan,reduce
heattoverylowandcookuntil
caramelised(10-12minutes).
Addstock,coconutcream,palm
sugar, kecapmanis,lemongrass,
kaffirlime,saffron,turmeric,
pastesandbriskettopan,then
bringtoa simmer.Coverwithfoil
ora tight-fittinglid,transferto
ovenandcookuntilbrisketis
tenderandcanbeshredded
witha fork(3-4hours).Cool
brisketin pan,thenremove
andshred.If needed,reduce
braisingliquiduntilthick.Return

doughinto8 balls.Workingone
ata time,flattena ballandplace
a portionoffrozenfillingontop.
Moulddougharoundfillingto
sealcompletely.Placeseam-
sidedownona smallsquare
of baking paper. Repeat with

remainingdoughballsand
filling.Transfertoa lidded
containerwithatleast4cm
spacebetweeneach.Seal
andsetasidetoprove(1 hour).
5 Formayonnaise,whisk
ingredientsin a bowluntil
combined.Setaside.
6 Preheata largesteamer
overhighheat.Transfersesame
seedstoa bowl.Diptophalf
ofbunsin seedstocoat,then
steamuntilfluffyandcooked
through(15minutes).
7 Meanwhile,preheatoilin a
large,deepsaucepanto180°C.
Deep-frybuns,in batches,until
goldenbrown,turninghalfway
throughcooking(3minutes).
Drain,thenseasonwithsalt.
8 Toserve,topeachbunwith
a spoonfulofmayoandgarnish
withcoconutandchives.
