1 largeonion,thicklysliced
1 tbspbrownsugar
1 tbspbalsamicvinegar
70 gmwholegrainmustard
2 tbspbarleymaltsyrup
2 thick-cutsirloinsteaks
(250gmeach)
150 gmcheddar,grated
8 thickslicessourdough
100 gmaïoli
50 gmfirmlypacked baby
rocket

1 Heatbutterina largefrying
panovermediumheat.Cook
onions,stirringoccasionally,
untilsoft(10minutes).Add
sugarandvinegarandcook
untilcaramelised(3minutes).
Transfertoa bowl.
2 Combinemustardand
maltsyrupina smallbowl.
3 Heata heavy-basedfrying
panoverhighheat.Season
steakswell,thencookfor
2 minutesoneachsidefor
medium-rareoruntilcooked
toyourliking.Transfersteaks
toa plate,brushwithmustard
sauce, cover loosely with foil

andsetaside(5minutes).
4 Preheatgrilltohigh.
Arrangebreadonanoven
trayToastbreaduntilgolden
(1 minute),thenflipandtoast
again(1 minute).Remove
4 slicesfromtrayandreserve.
Sprinkleremainingsliceswith
cheddarandgrilluntilmelted
andbubbling(2minutes).
5 Slicesteakslengthways.
Spreadaïolionreservedbread
slices,thentopwithrocket,
onions,steakanda littleof
themaltedmustard,topping
withthemelted-cheesetoast.
