50 mlextra-virginoliveoil,

240 gmfreshricotta,crumbled
Broadbeansleaves
(optional),toserve
PASTADOUGH
500 gm(3⅓cups) plain flour
5 eggs
1 eggyolk
BROAD-BEANSAUCE
500 gmpoddedyoungbroad
beans(about1.5kg
unpodded)

150 mlpouringcream
1 cup(looselypacked)
sorrel(seenote)
50 gm(¼cup)capers
rinsedanddrained
Finelygratedzestand
juiceof1 lemon
2 tbspdill

1 Forpastadough,placeflour
and½tspfinesaltinanelectric
mixerfittedwitha doughhook.
Addeggs,yolkand2 tspwater,
andmixuntila doughforms.
Transfertoa benchandknead
untildoughis smoothand
elastic(5minutes).Coverand
refrigeratetorest(1 hour).
Cut dough into 6 pieces.

Workingwith1 pieceata time,
keepingremaindercovered,
flatten,thenrollthrougha pasta
machine,startingatthefirst
setting.Rollandlaminatedough
a fewtimesonthefirstsetting,
thenreducesettingsnotchby
notch,rollingandfoldingdough
asyougo,until1.5mmthick.
Trimpastasheetsinto
manageablepieces,roll
throughtagliatelleattachment,
thenhangtodry(20minutes).
Storeina flouredcontainer
untilreadytouse.
2 Forbroad-beansauce,
blanchbeansina saucepanof
boilingwateruntilbrightgreen
(30seconds),thenrefreshin
icedwater.Double-peellarger
broadbeans(young,tender
beanscanremainintheir
skins),thentransfertoa food
processorwithremaining
ingredients,seasontotaste
andprocessuntilsmooth.
3 Cookpastaina large
saucepanofboilingsalted
wateruntilal dente,adding
broadbeanshalfwaythrough
(2-2½minutes).Drain,reserving
a littlepastacookingwater.
4 Meanwhile,heatoliveoilin
a separatesaucepanoververy
lowheat.Addpastaandbeans,
andtosstocombine,addinga
littlepastawatertoloosen,if
needed.Addlemonzestand
juice,andbroad-beansauce.
Seasontotaste.
5 Servepastatoppedwith
ricottaandbroad-beanleaves,
anddrizzledwithoil.

leavesareavailableat
farmers’marketsandselect
greengrocers,butmayneed
tobeorderedahead.If
unavailable,substitutefinely
slicedsnowpeasandgarnish
withrocket.Sorrelis preferred
asit hasa brightcitricflavour;

totaste.
