300 gm(11/2cups)quinoa
50 gmbutter
1 goldenshallot,
finelychopped
12 uncookedprawns,
peeledanddeveined
Largepinchofsaffron
mixedwith1 tbsphotwater
1 tbspfinelychoppedginger
1 garlicclove,finelychopped
1 smallredchilli,
finelychopped
1 cupeach(looselypacked)
corianderandflat-leaf
parsley,coarselychopped
Juiceof1 lemon,plus
extra wedges to serve

1 Cookquinoain a large
saucepanofboilingwater
untiltender(10-15minutes).
Drainandsteamdry.
2 Meanwhile,meltbutterin
a deepfryingpanovermedium
heat.Addshallotandfry,
stirringfrequently,untiltender
(8-10minutes).Addprawns
andsaffronwater,andturn
occasionallyuntilalmost
cookedthrough(3-5minutes).
Addginger, garlicandchilli,and

heatandstirthroughherbs.
