Thesegreenpocketsaretheultimatefastfood.Theyareourversionofgozlemeand
we’vebeenmakingthemforyears.If it’stheweekendwe’llmakethesimpleyoghurt
dough,butona weeknightwe’llpickupa packofGreekpitas(thethicker,doughy
sort) or souvlaki bread on the way home from work. It is truly a 15-minute meal.

100 gm(2cups)verythinly
slicedgreenleaves,such
asEnglishorbabyspinach,
silverbeet,kaleorrocket
⅓ cupfinelychoppedsoft
herbs,suchasmint,dill
orparsley
200 gmcheese,suchasricotta,
crumbledfeta,grated
haloumiormozzarella
70 gm(⅔cup)grated
parmesan
100 mloliveoil
Lemonwedges,toserve
SPICEDONION(OPTIONAL)
½ smallonion,finelydiced
2 garliccloves,minced
½ tspgroundcumin
2 tspdriedherbs,suchas
oregano,mintorbasil
SIMPLEYOGHURTDOUGH
1 tbspvegetableoil
1 tspwhitewinevinegar
250 gm(1cup)Greek-style
yoghurt
375 gm(2½cups)plainflour,
plusextrafordusting
1 tsp bicarbonate of soda

1 Combinegreenleavesand
herbsina bowl.Ina separate
bowl,combinecheeseswith
½tspsalt.Youcanleavethe
mixturehereandit willbe
yummyandfamilyfriendly,but
if youwanttotakeit upa notch,
it’sworththeextra5 minutes
tomakethespicedonion.
2 Forspicedonion,combineall
theingredientsina smallbowl,
seasontotasteandsetaside.
3 Foryoghurtdough,combine
oil,vinegarandyoghurtin a bowl
andmixwell.Siftoverflourand
bicarbonateofsoda,andmix
witha woodenspoonuntilthe
ingredientscometogetherto
forma dough.Tipoutonto
a flouredsurfaceandkneadfor
10 minutesuntilverysmooth.
Dividedoughinto8 equalballs
andplaceundera damptea
towel.Workingwithoneballat
time,rolloutinto15cmrounds.
4 Spread2 tbspcheesemixture
overhalfofeachdoughround
(orpitabread,if using)and
scatter 2-3 tsp of the spiced

onionmixture(if using)on
top.Add½cupofthegreens
mixture,thenfoldthedough
overtoforma semi-circle,
pinchingtheedgestoseal.
If usingpita,wetyourhands
anddampentheedgesofeach
pitaandsealasbestasyoucan.
5 Heatoilina fryingpanover
mediumheat.Pan-frypockets,
inbatchesuntilgoldenbrown
(2-3minuteseachside).You
canalsobrusheachpocket
witholiveoilandgrillthem
onthebarbecue.Servewith
a squeezeoflemonanda salad
if youcanbebothered,but
therearesomanygreensin the
pockets, you hardly need to.
